Streamline Your Mornings: Make Ahead Breakfast Ideas (A Mini Series)

Presenting: Sweet Spinach Muffins with Banana

Imagine a weekday morning when you can wake up, chop up some fruit or warm up sausage, then pull these out of the freezer and breakfast is set. Or just keep them for snack time for yourself or your kids. Life is so much easier when you don’t have to (fully) cook 3 meals a day.

Ingredients

  • 1 cup sliced ripe banana (about 2 small or 1 medium/large)

  • 2 cups lightly packed baby spinach

  • 3/4 cup milk (dairy or unsweetened plain nondairy)

  • 1/4 cup honey or maple syrup

  • 2 tablespoons melted and cooled butter (OR neutral oil OR plain yogurt)

  • 2 eggs (if you need to omit the eggs, increase banana to 1 ½ cups)

  • 1 teaspoon vanilla extract

  • 1 cup rolled oats

  • 1 teaspoon baking soda

  • 1/8 teaspoon salt

  • 1 cup whole-wheat flour

  • Mini chocolate chips (optional)

Instructions

  1. Place all ingredients into a blender (except flour and chocolate chips).

  2. Blend until very smooth.

  3. Add the flour.

  4. Pulse in the flour to combine.

  5. Pour batter into muffin tin, filling each cup about ž cup full. Sprinkle with chocolate chips if using.

  6. Bake until firm to the touch and lightly browned around the edges.

Note: This is not the first time Ms. Rachel shows public support for the LGBTQ+ agenda on Prime Month. She had a public Pride Month post in 2023 and has even invited openly and widely known trans man, Dylan Mulvaney, to her show. In response from backlash from parents, she quoted Matthew 22 on a separate post.
