🍗 Use Your Slow Cooker This Summer

It’s safe to say we all want to skip the slow cooker roast with carrots and potatoes in summer…it’s just not the kind of meal you crave on a hot summer day. This chicken shawarma recipe is healthy, simple to make, and most importantly great for enjoying even in high temps.

📖 Slow Cooker Chicken Shawarma

Instructions: Add 1 large sweet onion (sliced) to a crock pot. Place marinated chicken on top (marinate ingredients and instructions below). Cook on high for 2-3 hours or on low for 4-6 hours. Remove the chicken and roughly chop it before returning it to the slow cooker. Mix it with the sauce and let it sit for 10-15 mins before serving.

Marinate Ingredients

  • ⅓ cup plain Greek yogurt

  • 2 tablespoons fresh lemon juice

  • 3 cloves garlic, minced

  • 2 teaspoons smoked paprika

  • 2 teaspoons ground cumin

  • 1 ½ teaspoons black pepper

  • 1 teaspoon kosher salt

  • ½ teaspoon ground turmeric

  • ½ teaspoon ground cinnamon

  • Âź-1/2 teaspoon red pepper flakes

Marinate Instructions:

Combine all ingredients in a bowl or plastic bag. Add 2lbs of chicken thighs and mix. Refrigerate for at least 4 hours or overnight. Sub for chicken breast if you prefer.

Serving Ideas: over rice, on pita or another flat bread, over couscous.

Topping Ideas: tomatoes, cucumbers, hummus, olives, feta, lettuce.
